Beef Lettuce Wraps with Spicy Peanut Sauce

Ingredients

  • ¾ lb ground beef
  • ¼ cup no-sugar-added creamy peanut butter
  • 2 Tbsp low-sodium soy sauce
  • 1 Tbsp rice vinegar
  • 1 clove garlic, minced
  • ½ Tbsp grated ginger
  • 1 tsp chili garlic sauce (or use Sriracha)
  • 6 green leaf lettuce leaves
  • 3 Tbsp chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  1. Cook beef in a large skillet over medium-high heat 8 minutes or until browned and crumbly; keep warm.
  2. Whisk together peanut butter, soy sauce, vinegar, garlic, ginger, and chili garlic sauce.
  3. Divide beef among lettuce leaves; drizzle with peanut sauce. Sprinkle with cilantro; serve with lime wedges.
