Peanut Beef and Vegetables

Ingredients
- 2 (12-oz) pkg vegetable stir-fry medley
- 1½ lb flank steak, thinly sliced (or use skirt steak)
- 2 Tbsp olive oil
- 1¼ cups peanut sauce
- ½ cup roasted, lightly salted peanuts
Instructions
- Cook vegetables in microwave according to package directions.
- Meanwhile, sprinkle steak with salt and pepper, if desired. Cook steak in hot oil in a large skillet over medium-high heat 4 to 6 minutes or to desired doneness.
- Add vegetables to skillet with beef. Stir in peanut sauce; cook 3 minutes or until thoroughly heated. Sprinkle with nuts.
