Peanut Beef and Vegetables

Ingredients

  • 2 (12-oz) pkg vegetable stir-fry medley
  • 1½ lb flank steak, thinly sliced (or use skirt steak)
  • 2 Tbsp olive oil
  • 1¼ cups peanut sauce
  • ½ cup roasted, lightly salted peanuts

Instructions

  1. Cook vegetables in microwave according to package directions.
  2. Meanwhile, sprinkle steak with salt and pepper, if desired. Cook steak in hot oil in a large skillet over medium-high heat 4 to 6 minutes or to desired doneness.
  3. Add vegetables to skillet with beef. Stir in peanut sauce; cook 3 minutes or until thoroughly heated. Sprinkle with nuts.
