Ingredients

  • 6 (6-oz) boneless, skinless chicken breasts
  • ¾ cup sour cream
  • 1 (1-oz) envelope Ranch dressing mix, divided
  • 1 cup panko breadcrumbs
  • 1 cup shredded sharp Cheddar cheese

Instructions

  1. Preheat oven to 450°F. Pound chicken to an even thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Mix together sour cream and half of Ranch dressing mix in a bowl. Combine panko, cheese, and half of Ranch dressing mix in another shallow bowl.
  3. Spread sour cream mixture over one side of each chicken breast; dredge coated side in panko mixture, pressing to adhere. Place chicken, coated side up, in a greased baking dish.
  4. Bake 15 to 18 minutes or until chicken is done.

  • 2 (12-oz) pkg vegetable medley (broccoli, cauliflower, and carrots)
  • 3 Tbsp olive oil
  • ¾ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp pepper

  1. Cook vegetables according to package directions. Toss with oil, garlic powder, salt, and pepper.
