Jerk Pork Chops
Cumin-Lime Slaw
Ingredients
- 1 lb thick cut boneless pork chops
- 1 Tbsp Jamaican Jerk seasoning
- ¼ tsp salt
- 1 onion, sliced
- 1½ Tbsp butter, diced
- 2 Tbsp water
Instructions
- Sprinkle pork chops with Jerk seasoning and salt.
- Arrange half of onions in a lightly greased 3- to 4-quart slow cooker. Arrange pork chops over onion. Top with remaining onion; dot with butter. Pour in water.
- Cover and cook on LOW 6 hours or until pork chops are tender.
Side Dish Ingredients
- ½ (16-oz) pkg tricolor coleslaw
- 2 Tbsp chopped fresh cilantro
- 1 jalapeño pepper, seeded and minced
- 1½ Tbsp olive oil
- 1 Tbsp lime juice
- ½ tsp ground cumin
- ¼ tsp salt
- 2 Tbsp slivered almonds
Side Dish Instructions
- Toss together coleslaw, cilantro, jalapeño, oil, lime juice, cumin, and salt in a bowl. Let stand 10 minutes.
- Meanwhile, toast nuts in a dry skillet over medium-high heat 4 to 5 minutes or until golden and fragrant. Cool.
- Add nuts to slaw; toss.
