Jerk Pork Chops

Ingredients

  • 1 lb thick cut boneless pork chops
  • 1 Tbsp Jamaican Jerk seasoning
  • ¼ tsp salt
  • 1 onion, sliced
  • 1½ Tbsp butter, diced
  • 2 Tbsp water

Instructions

  1. Sprinkle pork chops with Jerk seasoning and salt.
  2. Arrange half of onions in a lightly greased 3- to 4-quart slow cooker. Arrange pork chops over onion. Top with remaining onion; dot with butter. Pour in water.
  3. Cover and cook on LOW 6 hours or until pork chops are tender.

Side Dish Ingredients

  • ½ (16-oz) pkg tricolor coleslaw
  • 2 Tbsp chopped fresh cilantro
  • 1 jalapeño pepper, seeded and minced
  • 1½ Tbsp olive oil
  • 1 Tbsp lime juice
  • ½ tsp ground cumin
  • ¼ tsp salt
  • 2 Tbsp slivered almonds

Side Dish Instructions

  1. Toss together coleslaw, cilantro, jalapeño, oil, lime juice, cumin, and salt in a bowl. Let stand 10 minutes.
  2. Meanwhile, toast nuts in a dry skillet over medium-high heat 4 to 5 minutes or until golden and fragrant. Cool.
  3. Add nuts to slaw; toss.
