Roasted Butternut Squash and Bacon Pasta
Garlic-Roasted Broccoli
Ingredients
- ½ butternut squash, peeled and cut into 1-inch cubes
- ½ onion, cut into wedges
- 2 Tbsp olive oil
- 4 slices bacon, chopped
- ½ (16-oz) pkg linguine
- ¼ cup butter
- ½ tsp dried thyme
- ½ cup shredded Parmesan cheese
Instructions
- Preheat oven to 425°F. Toss together squash, onion, and oil on a rimmed baking sheet. Bake 25 minutes or until squash is tender.
- Meanwhile, cook bacon in a large skillet over medium heat until crisp.
- Cook pasta according to package directions. Drain, reserving ½ cup pasta water.
- Melt butter in a large skillet over medium heat; add thyme, and cook, stirring occasionally, until butter is browned and has a nutty aroma. Add pasta, vegetables, bacon, and cheese; toss. Stir in enough pasta water to make a light sauce. Season with salt and pepper to taste.

- 2 cloves garlic, minced
- 2 Tbsp olive oil

- Preheat oven to 425°F. Toss together broccoli, garlic, and oil on a rimmed baking sheet; spread in a single layer. Season lightly with salt and pepper.
- Bake 10 to 12 minutes or until crisp-tender.
