Cheesy Chicken, Broccoli, and Rice Skillet

Ingredients

  • 1 (8.8-oz) pouch microwavable long-grain rice
  • 1 (12-oz) pkg broccoli florets
  • 2 Tbsp butter
  • ¾ lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 Tbsp all-purpose flour
  • ½ cup milk
  • ½ cup chicken broth
  • 1 cup shredded Cheddar cheese

Instructions

  1. Cook rice and and broccoli according to package directions.
  2. Melt butter in a large skillet over medium-high heat. Add chicken, and cook 5 minutes, stirring occasionally. Stir in flour, and cook 2 minutes. Add milk and broth; cook, stirring constantly, 5 minutes or until thickened. Remove from heat and lightly season with salt and pepper.
  3. Stir in ½ cup cheese until melted. Stir in rice, and broccoli. Top with ½ cup cheese. Cover, and cook 1 minute or until cheese is melted.

Side Dish Ingredients

  • ½ (6-count) pkg frozen garlic breadsticks

Side Dish Instructions

  1. Bake breadsticks according to package directions.
