Steak Fajita Salad

Ingredients

  • ¾ lb skirt steak, cut into large pieces
  • 1 Tbsp Southwest seasoning
  • 1 Tbsp olive oil, divided
  • 1 green bell pepper, thinly sliced
  • ½ red onion, thinly sliced
  • ½ cup Ranch dressing
  • 2 Tbsp fresh salsa
  • 1 (10-oz) pkg chopped romaine lettuce
  • ½ cup shredded Cheddar cheese

Instructions

  1. Rub steak with seasoning. Cook steak in ½ Tbsp hot oil in a large skillet over medium heat 3 to 4 minutes per side or to desired doneness; set aside.
  2. Cook bell pepper and onion in ½ Tbsp hot oil in same skillet over medium-high heat 5 minutes or until tender.
  3. Thinly slice steak across the grain.
  4. Combine Ranch dressing and salsa in a small bowl.
  5. Divide lettuce among 2 plates. Top with steak and vegetables. Sprinkle with cheese, and drizzle with dressing.

Side Dish Ingredients

  • 4 fajita-size flour tortillas
  • 2 Tbsp butter, softened

Side Dish Instructions

  1. Heat tortillas according to package directions.
  2. Serve with softened butter.
