Easy Chicken-Avocado Soup
Ingredients
- 6 green onions, chopped
- 2 cloves garlic, minced
- 1 Tbsp olive oil
- 1 tomato, chopped
- 5 cups low-sodium chicken broth
- 1 tsp ground cumin
- 1 tsp chipotle chili powder
- 3 cups shredded rotisserie chicken
- 2 avocados, chopped
- ½ cup chopped fresh cilantro
- 2 limes, halved
Instructions
- Cook green onions and garlic in hot oil in a large Dutch oven 2 minutes .
- Add tomato, broth, cumin, and chili powder; bring to a boil. Cover, reduce heat to medium-low, and simmer 20 minutes; stir in chicken.
- Ladle soup into 4 bowls, and top with avocado, cilantro, and a big squeeze of lime.
