Easy Chicken-Avocado Soup

Ingredients

  • 6 green onions, chopped
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 tomato, chopped
  • 5 cups low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp chipotle chili powder
  • 3 cups shredded rotisserie chicken
  • 2 avocados, chopped
  • ½ cup chopped fresh cilantro
  • 2 limes, halved

Instructions

  1. Cook green onions and garlic in hot oil in a large Dutch oven 2 minutes .
  2. Add tomato, broth, cumin, and chili powder; bring to a boil. Cover, reduce heat to medium-low, and simmer 20 minutes; stir in chicken.
  3. Ladle soup into 4 bowls, and top with avocado, cilantro, and a big squeeze of lime.
