Banana Bread Pancakes
Ingredients
- 1½ cups whole-grain pancake mix
- 1 Tbsp brown sugar
- 1 tsp ground cinnamon
- 2 large bananas, mashed
- 2 large eggs, lightly beaten
- ¾ cup 1% low-fat milk
- 2 Tbsp butter, melted
- 2 Tbsp pure maple syrup
Instructions
- Stir together pancake mix and brown sugar, and cinnamon in a large bowl.
- Whisk together bananas, milk, and melted butter; add to flour mixture, stirring just until blended.
- Spray griddle or a large nonstick skillet with cooking spray; preheat to medium heat. Pour about ¼ cup batter for each pancake onto griddle. Cook until tops are covered with bubbles; turn and cook other side. Serve drizzled with syrup.
