Banana Bread Pancakes

Ingredients

  • 1½ cups whole-grain pancake mix
  • 1 Tbsp brown sugar
  • 1 tsp ground cinnamon
  • 2 large bananas, mashed
  • 2 large eggs, lightly beaten
  • ¾ cup 1% low-fat milk
  • 2 Tbsp butter, melted
  • 2 Tbsp pure maple syrup

Instructions

  1. Stir together pancake mix and brown sugar, and cinnamon in a large bowl.
  2. Whisk together bananas, milk, and melted butter; add to flour mixture, stirring just until blended.
  3. Spray griddle or a large nonstick skillet with cooking spray; preheat to medium heat. Pour about ¼ cup batter for each pancake onto griddle. Cook until tops are covered with bubbles; turn and cook other side. Serve drizzled with syrup.
