Ingredients

  • 1½ lb ground sirloin
  • 1 green bell pepper, chopped
  • 1 sweet onion, chopped
  • 4 cloves garlic, minced
  • 2 sweet potatoes, cut into chunks (or use 1 medium butternut squash)
  • 2 (14.5-oz) cans fire-roasted diced tomatoes
  • 3 Tbsp chili powder
  • ½ tsp salt
  • ½ tsp pepper
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Cook beef, bell pepper, onion, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and transfer to a 5- to 7-quart slow cooker.
  2. Stir in sweet potatoes, tomatoes, chili powder, salt, and pepper.
  3. Cover and cook on LOW 6 hours.
  4. Top servings with cheese.
