Pork Piccata
Couscous with Green PeasIngredients
- 2 lb boneless pork roast, halved
- ½ tsp pepper
- 2 Tbsp olive oil
- ¼ cup lemon juice
- 4 Tbsp butter, cut into pieces
- 1 (3.5-oz) jar capers, drained
- 4 cloves garlic, minced
Instructions
- Sprinkle pork with pepper. Cook pork in hot oil in a large skillet over medium-high heat 6 to 8 minutes or until browned on all sides.
- Transfer pork to a 5- to 7-quart slow cooker. Add lemon juice, butter, capers, and garlic.
- Cover and cook on LOW 8 to 10 hours or until pork is tender.
- Slice pork, and serve with lemon-caper sauce.

- 1 (12-oz) pkg frozen petite green peas
- 1 (10-oz) pkg plain couscous
- ¼ tsp salt
- ¼ tsp pepper

- Cook peas according to package directions.
- Cook couscous according to package directions; stir in peas, salt, and pepper.
