Cheesy Italian Grinders
Parmesan Potato Chips
Ingredients
- 1½ lb plant-based ground beef
- 1 onion, thinly sliced
- 2 green bell peppers, thinly sliced
- 4 cloves garlic, minced
- 2 (14.5-oz) cans fire-roasted diced tomatoes
- 1 (8-oz) can tomato sauce
- 1 Tbsp Italian seasoning
- 6 hoagie rolls
- 1 (8-oz) pkg sliced provolone cheese
Instructions
- Cook beef, onion, bell peppers, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and transfer to a 5- to 7-quart slow cooker.
- Stir in tomatoes, tomato sauce, and Italian seasoning. Cover, and cook on LOW 6 to 8 hours.
- Split hoagie rolls, and layer cheese slices on buns; spoon meat mixture over cheese.
Side Dish Ingredients
- 1 (8.5-oz) bag kettle-cooked potato chips
- ¾ cup freshly grated Parmesan cheese
Side Dish Instructions
- Preheat oven to 400°F.
- Arrange chips on a large rimmed baking sheet; bake 5 to 6 minutes or until chips are shiny. Sprinkle with cheese.
