Ingredients

  • 1½ lb plant-based ground beef
  • 1 onion, thinly sliced
  • 2 green bell peppers, thinly sliced
  • 4 cloves garlic, minced
  • 2 (14.5-oz) cans fire-roasted diced tomatoes
  • 1 (8-oz) can tomato sauce
  • 1 Tbsp Italian seasoning
  • 6 hoagie rolls
  • 1 (8-oz) pkg sliced provolone cheese

Instructions

  1. Cook beef, onion, bell peppers, and garlic in a large skillet over medium heat until beef is browned and crumbly; drain and transfer to a 5- to 7-quart slow cooker.
  2. Stir in tomatoes, tomato sauce, and Italian seasoning. Cover, and cook on LOW 6 to 8 hours.
  3. Split hoagie rolls, and layer cheese slices on buns; spoon meat mixture over cheese.

Side Dish Ingredients

  • 1 (8.5-oz) bag kettle-cooked potato chips
  • ¾ cup freshly grated Parmesan cheese

Side Dish Instructions

  1. Preheat oven to 400°F.
  2. Arrange chips on a large rimmed baking sheet; bake 5 to 6 minutes or until chips are shiny. Sprinkle with cheese.
