Asian Beef Roast

Green Onion Rice Noodles and Sesame Sugar Snap Peas

Ingredients

  • 1½ lb boneless chuck roast
  • 3 Tbsp Chinese five-spice powder
  • ½ tsp crushed red pepper
  • 1 (14.5-oz) can low-sodium beef broth
  • ¼ cup low-sodium soy sauce
  • 2 Tbsp sesame seeds (optional)

Instructions

  1. Rub roast with five-spice powder and red pepper. Place in a 5- to 7-quart slow cooker; add broth and soy sauce.
  2. Cover and cook on LOW 10 hours or until tender.
  3. Shred with 2 forks. Serve beef over Green Onion Rice Noodles recipe. Sprinkle with sesame seeds, if desired.

  • 1 (14-oz) pkg rice noodles
  • 1 Tbsp olive oil
  • 3 green onions, thinly sliced
  • 1 lb sugar snap peas
  • 3 Tbsp sesame oil
  • 1 Tbsp sesame seeds (optional)
  • ¼ tsp salt
  • ¼ tsp pepper

Side Dish Instructions

  1. Cook noodles according to package directions. Toss noodles with olive oil and green onions.
  2. Cook sugar snap peas in hot sesame oil over medium heat 3 minutes or until crisp tender; sprinkle with sesame seeds, if desired, salt, and pepper.
