Easy Caesar Chicken

Butter and Garlic Rice and Broccoli

Ingredients

  • 2 lb boneless, skinless chicken breasts
  • 1 (5-oz) pkg Caesar croutons, crushed
  • ½ cup grated Parmesan cheese
  • ¾ cup Caesar dressing

Instructions

  1. Preheat oven to 425°F. Cut chicken in half lengthwise and pound to ½-inch-thickness in a zip-top plastic bag using the heel of your hand or a meat mallet.
  2. Stir together crushed croutons and cheese in a shallow bowl.
  3. Brush chicken with dressing and dredge in crouton mixture to coat. Place on a lightly greased baking sheet, and bake 20 minutes or until browned and done.

Side Dish Ingredients

  • 2 (8-oz) pouches microwavable butter and garlic rice
  • 2 (12-oz) pkg broccoli florets
  • 2 Tbsp butter

Side Dish Instructions

  1. Cook rice in microwave according to package directions.
  2. Cook broccoli according to package directions; place in a serving bowl, and stir in butter until melted. Season with salt and pepper to taste.
