Healthy Oatmeal-Pumpkin Cookies

Ingredients

  • 1½ cups whole wheat flour
  • 1 cup old-fashioned oats
  • 1½ tsp baking powder
  • 1 tsp pumpkin pie spice
  • ¼ tsp salt
  • ¾ cup pumpkin puree
  • ½ cup unsweetened applesauce
  • ⅓ cup pure maple syrup
  • 3 Tbsp coconut oil, melted
  • 1 large egg, lightly beaten
  • 1 tsp vanilla extract
  • ½ cup semisweet chocolate chips

Instructions

  1. Preheat oven to 350°F. Line a large baking sheet with parchment paper.
  2. Whisk flour, oats, baking powder, pumpkin pie spice, and salt in a large bowl. Combine pumpkin puree, applesauce, maple syrup, oil, egg, and vanilla in another bowl. Beat with a spoon until smooth.
  3. Add wet ingredients to dry ingredients, and mix until just combined. Fold in chocolate chips.
  4. Drop dough by tablespoonfuls about 1 inch apart onto prepared baking sheet. Bake 15 minutes or until set; cool 2 minutes on baking sheet. Transfer to wire racks, and cool completely.
