Healthy Oatmeal-Pumpkin Cookies

Ingredients
- 1½ cups whole wheat flour
- 1 cup old-fashioned oats
- 1½ tsp baking powder
- 1 tsp pumpkin pie spice
- ¼ tsp salt
- ¾ cup pumpkin puree
- ½ cup unsweetened applesauce
- ⅓ cup pure maple syrup
- 3 Tbsp coconut oil, melted
- 1 large egg, lightly beaten
- 1 tsp vanilla extract
- ½ cup semisweet chocolate chips
Instructions
- Preheat oven to 350°F. Line a large baking sheet with parchment paper.
- Whisk flour, oats, baking powder, pumpkin pie spice, and salt in a large bowl. Combine pumpkin puree, applesauce, maple syrup, oil, egg, and vanilla in another bowl. Beat with a spoon until smooth.
- Add wet ingredients to dry ingredients, and mix until just combined. Fold in chocolate chips.
- Drop dough by tablespoonfuls about 1 inch apart onto prepared baking sheet. Bake 15 minutes or until set; cool 2 minutes on baking sheet. Transfer to wire racks, and cool completely.
