Pecan Pie Bars
Ingredients
- 2 cups all-purpose flour
- ½ cup sugar
- ¼ tsp salt
- 1½ cups unsalted butter, cut into ½-inch cubes, divided
- 1 cup packed brown sugar
- 1 cup light corn syrup
- 4 large eggs, lightly beaten
- 2½ cups chopped pecans
- 1 tsp vanilla extract
- Vanilla ice cream (optional)
Instructions
- Preheat oven to 350°F. Combine flour, sugar, salt, and ¾ cup butter in a food processor; pulse 5 to 10 times or until mixture resembles wet sand.
- Press mixture into a greased 13- x 9-inch baking dish. Bake 18 to 20 minutes or until lightly browned.
- Meanwhile, heat brown sugar, corn syrup, and ½ cup butter over medium heat in a saucepan, stirring gently; bring to a boil, and remove from heat.
- Stir together eggs and one-fourth of hot mixture in a separate bowl. Add to remaining hot mixture. Stir in nuts and vanilla. Pour filling over crust.
- Bake 35 minutes or until set. Cool completely in pan on a wire rack. Cut into bars. If desired, serve with ice cream. Makes 16 large bars.
