Paleo Chocolate-Almond Truffles

Ingredients

  • 1 (10-oz) pkg paleo chocolate chips
  • ½ cup unsweetened coconut milk
  • 2 cups finely chopped raw almonds, divided
  • ½ tsp salt

Instructions

  1. Place chocolate chips in a heatproof bowl.
  2. Microwave coconut milk at HIGH 1 minute or until just beginning to bubble. Pour coconut milk over chocolate; let stand 2 minutes. Whisk until smooth. If chocolate is still lumpy, microwave 15 seconds.
  3. Stir in ½ cup nuts and salt. Chill 2 hours or until firm.
  4. Scoop truffle mixture into 1-inch balls using a cookie scoop or melon baller. Place on a parchment paper-lined baking sheet. Chill truffle mixture if it becomes too soft while scooping.
  5. Roll truffles in 1½ cups nuts. Store, covered, in refrigerator.
