Mediterranean Pizza

Fruit Salad with Fresh Mint and Almonds

Ingredients

  • 1 (13.8-oz) can refrigerated pizza dough
  • 1½ cups plain hummus
  • 1 (14-oz) can quartered artichoke hearts, drained and patted dry
  • 1 cup halved grape tomatoes
  • 1 English cucumber, chopped
  • 1 small red onion, thinly sliced
  • 1 cup crumbled vegan feta cheese
  • ½ cup chopped kalamata olives

Instructions

  1. Preheat oven to 400°F. Roll out dough into a 14-inch round on a greased baking sheet. Prick surface of dough with a fork. Bake 10 minutes.
  2. Spread hummus over dough, leaving a 1-inch border. Top with artichokes, tomatoes, cucumber, onion, cheese, and olives. Bake 5 minutes or until crust is golden brown.

  • 1 (16-oz) container mixed fresh fruit
  • ½ cup chopped fresh mint
  • ½ cup sliced almonds

Side Dish Instructions

  1. Toss together all ingredients in a large bowl.
