Mediterranean Pizza

Ingredients
- 1 (13.8-oz) can refrigerated pizza dough
- 1½ cups plain hummus
- 1 (14-oz) can quartered artichoke hearts, drained and patted dry
- 1 cup halved grape tomatoes
- 1 English cucumber, chopped
- 1 small red onion, thinly sliced
- 1 cup crumbled vegan feta cheese
- ½ cup chopped kalamata olives
Instructions
- Preheat oven to 400°F. Roll out dough into a 14-inch round on a greased baking sheet. Prick surface of dough with a fork. Bake 10 minutes.
- Spread hummus over dough, leaving a 1-inch border. Top with artichokes, tomatoes, cucumber, onion, cheese, and olives. Bake 5 minutes or until crust is golden brown.

- 1 (16-oz) container mixed fresh fruit
- ½ cup chopped fresh mint
- ½ cup sliced almonds

- Toss together all ingredients in a large bowl.
