Ingredients

  • 1 (5-oz) pkg baby spinach (or use baby kale)
  • ¼ cup thinly sliced red onion
  • 6 Tbsp balsamic vinaigrette
  • 3 hard-cooked eggs, quartered 
  • 1 (8-oz) pkg steamed baby beets, quartered
  • 6 Tbsp crumbled blue cheese (or use feta)
  • 6 Tbsp coarsely chopped walnuts 

Instructions

  1. Toss together spinach, onion, and vinaigrette in a bowl. Top with eggs, beets, cheese, and nuts.
