Creamy Grouper Piccata

Ingredients

  • 3 (6-oz) grouper fillets (or use cod)
  • 2 tsp chopped fresh chives (or use 1 tsp dried)
  • ½ (8-oz) carton sour cream
  • 2 Tbsp capers
  • ½ lemon, cut into wedges

Instructions

  1. Preheat oven to 425°F. Sprinkle fish with salt and pepper, if desired. Place fish on foil-lined baking sheet coated with cooking spray.
  2. Bake 10 minutes; sprinkle with chives. Bake 2 minutes longer or until fish flakes with a fork.
  3. Meanwhile, combine sour cream and capers; serve sauce with fish. Squeeze lemon juice over fish.

  • 1 lb carrots, cuts into ¼-inch-thick sticks
  • 1½ Tbsp olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¼ cup freshly grated Parmesan cheese
