Beef and Bacon Bolognese
Easy Cauli-Rice
Ingredients
- 4 slices bacon, chopped
- 2 carrots, minced
- 2 celery stalks, minced
- ½ small onion, finely chopped
- 1 clove garlic, minced
- 1 lb ground beef (or use ground chicken or turkey)
- ¼ cup red wine (or use low-sodium beef broth)
- ½ (28-oz) can San Marzano whole tomatoes
- ¼ tsp pepper
- ⅛ tsp salt
- ¼ cup heavy cream
- 2 Tbsp chopped fresh parsley
Instructions
- Cook bacon in a Dutch oven over medium heat until crisp; drain, reserving 1½ Tbsp drippings in pan. Sauté carrots, celery, onion, and garlic in hot drippings until tender.
- Add beef to pan. Cook until beef is no longer pink, stirring occasionally. Drain, if desired.
- Return beef and vegetable mixture to pan; add wine, tomatoes, pepper, and salt. Bring to a simmer; cook 20 to 30 minutes, stirring occasionally.
- Add cream; return to a simmer, and cook 10 minutes. Sprinkle with bacon and parsley.

- 1 (10-oz) pkg frozen riced cauliflower
- 2 Tbsp butter
- ½ tsp salt
- ½ tsp pepper
Side Dish Instructions
- Cook cauliflower according to package directions. Stir in butter, salt, and pepper.
