Veggie-Smothered Turkey Burgers

Sweet Potato Puffs and Butter Lettuce Salad

Ingredients

  • ½ (20-oz) pkg ground turkey (or use ground chicken or lean ground beef)
  • 1 Tbsp salt-free Montreal steak seasoning
  • 1 tsp Worcestershire sauce
  • 1 Tbsp canola oil, divided
  • 1 large green bell pepper, cut into strips
  • ¾ cup thinly sliced onion
  • 1 (8-oz) pkg sliced mushrooms
  • 2 cloves garlic, minced
  • ¼ tsp salt
  • 1 Tbsp cornstarch
  • ½ (14.5-oz) can low-sodium chicken broth

Instructions

  1. Combine turkey, seasoning, and Worcestershire sauce in a bowl. Shape into 3 patties.
  2. Cook burgers in ½ Tbsp hot oil in a skillet over medium-high heat 4 to 5 minutes per side or until no longer pink. Remove from skillet; keep warm.
  3. Sauté bell pepper, onion, mushrooms, garlic, and salt in ½ Tbsp hot oil in skillet 5 minutes or until tender.
  4. Whisk together cornstarch and broth; pour into skillet.
  5. Cook, stirring constantly, 2 to 3 minutes or until sauce is thickened and vegetables are tender.
  6. Top burgers with vegetables and sauce.

Side Dish Ingredients

  • ½ (20-oz) pkg frozen sweet potato puffs (see Note)
  • 1 (6-oz) pkg butter lettuce salad
  • 6 Tbsp light raspberry walnut dressing

Side Dish Instructions

  1. Bake potato puffs according to package directions.
  2. Toss together lettuce and dressing in a bowl.
