Veggie-Smothered Turkey Burgers
Sweet Potato Puffs and Butter Lettuce Salad
Ingredients
- ½ (20-oz) pkg ground turkey (or use ground chicken or lean ground beef)
- 1 Tbsp salt-free Montreal steak seasoning
- 1 tsp Worcestershire sauce
- 1 Tbsp canola oil, divided
- 1 large green bell pepper, cut into strips
- ¾ cup thinly sliced onion
- 1 (8-oz) pkg sliced mushrooms
- 2 cloves garlic, minced
- ¼ tsp salt
- 1 Tbsp cornstarch
- ½ (14.5-oz) can low-sodium chicken broth
Instructions
- Combine turkey, seasoning, and Worcestershire sauce in a bowl. Shape into 3 patties.
- Cook burgers in ½ Tbsp hot oil in a skillet over medium-high heat 4 to 5 minutes per side or until no longer pink. Remove from skillet; keep warm.
- Sauté bell pepper, onion, mushrooms, garlic, and salt in ½ Tbsp hot oil in skillet 5 minutes or until tender.
- Whisk together cornstarch and broth; pour into skillet.
- Cook, stirring constantly, 2 to 3 minutes or until sauce is thickened and vegetables are tender.
- Top burgers with vegetables and sauce.
Side Dish Ingredients
- ½ (20-oz) pkg frozen sweet potato puffs (see Note)
- 1 (6-oz) pkg butter lettuce salad
- 6 Tbsp light raspberry walnut dressing
Side Dish Instructions
- Bake potato puffs according to package directions.
- Toss together lettuce and dressing in a bowl.
