Ultimate Veggie Nachos
Ingredients
- 1 organic bell pepper (any color), sliced
- ½ onion, sliced
- 1 Tbsp olive oil
- ½ Tbsp chili powder
- 1 tsp ground cumin
- 1 (15-oz) can BPA-free black beans, drained and rinsed
- 1 (8-oz) container fresh salsa
- 1 (7-oz) pkg multigrain tortilla chips (or use whole-grain corn tortilla chips)
- 1 cup Monterey Jack cheese, shredded
- 1 cup shredded lettuce
Instructions
- Preheat oven to 350°F. Sauté pepper and onion in hot oil in a large nonstick skillet over medium-high heat 5 minutes or until tender; stir in chili powder, cumin, beans, and salsa.
- Arrange chips on a foil-lined rimmed baking sheet; top with pepper mixture and cheese.
- Bake 10 minutes or until cheese is melted; top with lettuce just before serving.
