Cajun Skillet Scramble
Broiled GrapefruitIngredients
- ½ lb andouille sausage (or use mild smoked sausage)
- 1 (12-oz) Yukon Gold potato, peeled and diced
- 1 Tbsp olive oil
- 1 green bell pepper, diced
- ½ cup chopped onion
- 4 large eggs, lightly beaten
- ⅛ tsp salt
Instructions
- Chop sausage. Cook in a large skillet over medium heat 3 minutes or until browned. Drain on paper towels.
- Sauté potato in hot oil in skillet over medium heat 5 minutes.
- Add bell pepper and onion. Cook 4 to 5 minutes or until onion is translucent.
- Add eggs and salt to skillet. Cook 2 minutes or until eggs are fully cooked, stirring often. Add sausage.
- Divide scramble among 4 plates.
Side Dish Ingredients
- 2 ruby red grapefruits, halved
- 2 Tbsp turbinado sugar
- ½ tsp ground cinnamon
Side Dish Instructions
- Preheat broiler; place grapefruit in a roasting pan. Sprinkle cut sides with sugar and cinnamon.
- Broil 3 to 5 minutes or just until browned, watching closely to prevent burning.
