Cajun Skillet Scramble

Ingredients

  • ½ lb andouille sausage (or use mild smoked sausage)
  • 1 (12-oz) Yukon Gold potato, peeled and diced
  • 1 Tbsp olive oil
  • 1 green bell pepper, diced
  • ½ cup chopped onion
  • 4 large eggs, lightly beaten
  • ⅛ tsp salt

Instructions

  1. Chop sausage. Cook in a large skillet over medium heat 3 minutes or until browned. Drain on paper towels.
  2. Sauté potato in hot oil in skillet over medium heat 5 minutes.
  3. Add bell pepper and onion. Cook 4 to 5 minutes or until onion is translucent.
  4. Add eggs and salt to skillet. Cook 2 minutes or until eggs are fully cooked, stirring often. Add sausage.
  5. Divide scramble among 4 plates.

Side Dish Ingredients

  • 2 ruby red grapefruits, halved
  • 2 Tbsp turbinado sugar
  • ½ tsp ground cinnamon

Side Dish Instructions

  1. Preheat broiler; place grapefruit in a roasting pan. Sprinkle cut sides with sugar and cinnamon.
  2. Broil 3 to 5 minutes or just until browned, watching closely to prevent burning.
