Caramelized Pineapple-Yogurt Parfaits

Ingredients

  • ⅓ cup sliced almonds
  • 1 Tbsp butter
  • 2 cups cubed pineapple
  • 3 Tbsp brown sugar
  • 3 cups fat-free vanilla Greek yogurt

Instructions

  1. Toast almonds in a dry nonstick skillet over medium-high heat 4 to 6 minutes or until golden and fragrant, stirring often.
  2. Meanwhile, melt butter in a medium saucepan over medium heat. Add pineapple and sugar.
  3. Cook 5 minutes or until sugar dissolves and pineapple is thoroughly heated, stirring often. Remove from heat, and cool 5 minutes.
  4. Divide half of pineapple between 4 glasses or portable containers; top with half of yogurt and almonds. Repeat layers.
