Caramelized Pineapple-Yogurt Parfaits
Ingredients
- ⅓ cup sliced almonds
- 1 Tbsp butter
- 2 cups cubed pineapple
- 3 Tbsp brown sugar
- 3 cups fat-free vanilla Greek yogurt
Instructions
- Toast almonds in a dry nonstick skillet over medium-high heat 4 to 6 minutes or until golden and fragrant, stirring often.
- Meanwhile, melt butter in a medium saucepan over medium heat. Add pineapple and sugar.
- Cook 5 minutes or until sugar dissolves and pineapple is thoroughly heated, stirring often. Remove from heat, and cool 5 minutes.
- Divide half of pineapple between 4 glasses or portable containers; top with half of yogurt and almonds. Repeat layers.
