Lemon-Pepper Chicken Thighs

Ingredients

  • 2 lb boneless, skinless chicken thighs
  • 1½ tsp lemon-pepper seasoning
  • ½ tsp salt
  • 3 Tbsp butter

Instructions

  1. Sprinkle chicken with lemon-pepper seasoning and salt. Melt butter in a large skillet over medium-high heat. Cook chicken in butter in skillet 4 to 5 minutes per side or until done.

  • 1¼ cups whole wheat Israeli (pearl) couscous
  • 1 (10-oz) pkg frozen cubed butternut squash
  • ¼ cup chopped fresh parsley
  • 2 Tbsp olive oil
  • ½ tsp salt

Side Dish Instructions

  1. Cook couscous and squash according to package directions.
  2. Toss together couscous, squash, parsley, oil, and salt in a bowl.
