Lemon-Pepper Chicken Thighs
Couscous with Butternut SquashIngredients
- 2 lb boneless, skinless chicken thighs
- 1½ tsp lemon-pepper seasoning
- ½ tsp salt
- 3 Tbsp butter
Instructions
- Sprinkle chicken with lemon-pepper seasoning and salt. Melt butter in a large skillet over medium-high heat. Cook chicken in butter in skillet 4 to 5 minutes per side or until done.
Side Dish Ingredients
- 1¼ cups whole wheat Israeli (pearl) couscous
- 1 (10-oz) pkg frozen cubed butternut squash
- ¼ cup chopped fresh parsley
- 2 Tbsp olive oil
- ½ tsp salt
Side Dish Instructions
- Cook couscous and squash according to package directions.
- Toss together couscous, squash, parsley, oil, and salt in a bowl.
