Tortellini with Sausage, Spinach, and Mushrooms

Ingredients
- 1 (9-oz) pkg refrigerated whole wheat cheese tortellini
- 2 (3-oz) mild Italian chicken sausage links, sliced
- 1 cup sliced baby portobello mushrooms
- 1 clove garlic, minced
- 2 cups baby spinach
- 2 Tbsp chopped walnuts
- 2 Tbsp freshly grated Parmesan cheese
- ⅛ tsp pepper
Instructions
- Cook tortellini according to package directions; drain, reserving 2 Tbsp pasta water.
- Meanwhile, cook sausage, mushrooms, and garlic in a nonstick skillet coated in cooking spray over medium heat 8 minutes or until sausage is browned and mushrooms are tender.
- Add spinach; cook 2 minutes or until liquid is evaporated. Stir in tortellini and reserved pasta water. Sprinkle with nuts, cheese, and pepper.
