Southwestern Corn Frittata

Ingredients

  • 2 large eggs, beaten
  • 2 Tbsp 1% low-fat milk
  • 2 cups frozen corn kernels, thawed
  • ½ cup chopped green bell pepper
  • 1 jalapeño pepper, seeded and minced
  • 2 Tbsp finely chopped red onion
  • ⅛ tsp salt
  • ¼ cup shredded reduced-fat Mexican-blend cheese
  • ¼ cup fresh salsa

Instructions

  1. Whisk together eggs and milk. Cook corn, bell pepper, jalapeño pepper, and onion in a nonstick skillet coated in cooking spray over medium heat 3 minutes or until lightly browned.
  2. Add egg mixture to skillet. Reduce heat to medium-low, cover, and 10 minutes or until center is set.
  3. Remove skillet from heat. Sprinkle with salt and cheese. Let stand 10 minutes before cutting into wedges. Serve topped with salsa.

  • 3 cups chopped green leaf lettuce
  • ½ cup chopped tomato
  • 3 Tbsp lite Italian salad dressing
  • ¼ tsp hot sauce

  1. Toss together all ingredients in a serving bowl.
