Italian Sausage, Barley and Vegetable Soup

Ingredients

  • 2 tsp canola oil
  • 12 oz hot Italian turkey sausage, casings removed
  • 5 cups water
  • 1½ cups chopped red onion
  • 1½ cups frozen whole kernel corn
  • 1½ cups sliced carrots
  • ⅓ cup quick-cooking barley
  • 1½ cups fresh salsa
  • 1 tsp dried oregano
  • ½ cup chopped fresh cilantro

Instructions

  1. Cook sausage in hot oil in large saucepan over medium-high heat 4 minutes or until browned and crumbly.
  2. Stir in water, onion, corn, carrots, barley, salsa, and oregano; bring to a boil. Reduce heat to medium-low; cook, uncovered, 15 minutes or until carrots are tender.

Side Dish Ingredients

  • 12 soft taco-size corn tortillas, warmed

Side Dish Instructions

  1. Serve tortillas alongside soup.
