Italian Sausage, Barley and Vegetable Soup
Warm Corn Tortillas
Ingredients
- 2 tsp canola oil
- 12 oz hot Italian turkey sausage, casings removed
- 5 cups water
- 1½ cups chopped red onion
- 1½ cups frozen whole kernel corn
- 1½ cups sliced carrots
- ⅓ cup quick-cooking barley
- 1½ cups fresh salsa
- 1 tsp dried oregano
- ½ cup chopped fresh cilantro
Instructions
- Cook sausage in hot oil in large saucepan over medium-high heat 4 minutes or until browned and crumbly.
- Stir in water, onion, corn, carrots, barley, salsa, and oregano; bring to a boil. Reduce heat to medium-low; cook, uncovered, 15 minutes or until carrots are tender.
Side Dish Ingredients
- 12 soft taco-size corn tortillas, warmed
Side Dish Instructions
- Serve tortillas alongside soup.
