Spiced Pork Chops
Broccoli Spears with Pear-Romaine Salad
Ingredients
- 2 (4-oz) boneless center-cut loin pork chops
- ½ tsp ground cumin
- ¼ tsp ground allspice
- ⅛ tsp salt
- ⅛ tsp pepper
Instructions
- Coat pork with cooking spray; sprinkle with allspice, cumin, salt, and pepper.
- Cook pork in a nonstick skillet over medium heat 4 minutes per side or until done.
Side Dish Ingredients
- ½ (1-lb) head broccoli
- 2 tsp light butter with canola oil
- ½ tsp salt, divided
- ½ tsp pepper, divided
- 1 Tbsp canola oil
- 2 tsp balsamic vinegar
- 2 cups chopped romaine lettuce
- 1 small firm pear, cored and sliced
- ¼ cup slivered almonds (toasted, if desired)
- 2 Tbsp dried cranberries
Side Dish Instructions
- Cut broccoli into spears. Steam broccoli in a steamer basket over boiling water 4 to 5 minutes or until crisp-tender. Top with butter and ¼ tsp each salt and pepper.
- Whisk together oil, vinegar, and ¼ tsp each salt pepper in a large bowl. Add lettuce, pears, nuts, and cranberries; toss.
