Chicken and Blue Cheese Sandwiches

Ingredients
- ½ lb chicken tenderloins (about 4)
- 2 onion sandwich buns
- 2 Tbsp reduced-fat mayonnaise
- 2 Tbsp crumbled reduced-fat blue cheese
- ⅛ tsp dried crushed rosemary
- 2 thin slices red onion
Instructions
- Preheat broiler. Coat both sides of chicken with cooking spray.
- Broil 4 to 5 minutes per side side or until done. Broil buns, cut sides up, 1 minute or until lightly browned.
- Meanwhile, stir together mayonnaise, cheese, and rosemary in a small bowl.
- Spread mayonnaise mixture over bottom halves of buns, and top with chicken and onion. Cover with bun tops.

- 1½ cups chopped apple
- 2 tsp fresh lemon juice
- 1 tsp honey
- ⅛ tsp ground cinnamon
Side Dish Instructions
- Place apples in a bowl. Whisk together lemon juice, honey, and cinnamon. Pour over apples; toss to coat.
