Chicken and Blue Cheese Sandwiches

Ingredients

  • ½ lb chicken tenderloins (about 4)
  • 2 onion sandwich buns
  • 2 Tbsp reduced-fat mayonnaise
  • 2 Tbsp crumbled reduced-fat blue cheese
  • ⅛ tsp dried crushed rosemary
  • 2 thin slices red onion

Instructions

  1. Preheat broiler. Coat both sides of chicken with cooking spray.
  2. Broil 4 to 5 minutes per side side or until done. Broil buns, cut sides up, 1 minute or until lightly browned.
  3. Meanwhile, stir together mayonnaise, cheese, and rosemary in a small bowl.
  4. Spread mayonnaise mixture over bottom halves of buns, and top with chicken and onion. Cover with bun tops.

Side Dish Ingredients

  • 1½ cups chopped apple
  • 2 tsp fresh lemon juice
  • 1 tsp honey
  • ⅛ tsp ground cinnamon

Side Dish Instructions

  1. Place apples in a bowl. Whisk together lemon juice, honey, and cinnamon. Pour over apples; toss to coat.
