Turkey Burgers with Chipotle Mayonnaise
Skillet Corn and Fresh Pineapple
Ingredients
- 2 Tbsp reduced-fat mayonnaise
- 2 Tbsp fat-free sour cream
- 1 tsp chopped chipotle pepper in adobo sauce
- 1 small clove garlic, minced
- ½ lb 93% lean ground turkey
- ⅛ tsp salt
- ⅛ tsp pepper
- 2 (1.5-oz) hamburger buns (preferably whole wheat), toasted
- ¼ red bell pepper, thinly sliced
- ½ cup arugula
Instructions
- Whisk together mayonnaise, sour cream, chipotle pepper and garlic in a small bowl; refrigerate until needed.
- Shape turkey into 6 (4-inch) patties; sprinkle both sides of patties with salt and pepper.
- Heat a large nonstick skillet over medium-high heat; coat both sides of the patties with cooking spray and cook 4 to 5 minutes on each side or until done.
- Spread mayonnaise mixture evenly over the bottom of each bun; top with patties, bell pepper and arugula. Cover with bun tops.

- 1⅓ cups frozen corn, thawed
- 2 tsp canola oil
- 1 tsp lime juice
- ½ tsp Sriracha hot sauce
- ⅛ tsp salt
- 1 cup cubed pineapple
Side Dish Instructions
- Sauté corn in hot oil in a skillet over medium-high heat. Add corn; sauté 4 to 5 minutes or until tender. Stir in lime juice, Sriracha, and salt.
- Serve corn and pineapple with burgers.
