Turkey Burgers with Chipotle Mayonnaise

Ingredients

  • 2 Tbsp reduced-fat mayonnaise
  • 2 Tbsp fat-free sour cream
  • 1 tsp chopped chipotle pepper in adobo sauce
  • 1 small clove garlic, minced
  • ½ lb 93% lean ground turkey
  • ⅛ tsp salt
  • ⅛ tsp pepper
  • 2 (1.5-oz) hamburger buns (preferably whole wheat), toasted
  • ¼ red bell pepper, thinly sliced
  • ½ cup arugula

Instructions

  1. Whisk together mayonnaise, sour cream, chipotle pepper and garlic in a small bowl; refrigerate until needed.
  2. Shape turkey into 6 (4-inch) patties; sprinkle both sides of patties with salt and pepper.
  3. Heat a large nonstick skillet over medium-high heat; coat both sides of the patties with cooking spray and cook 4 to 5 minutes on each side or until done.
  4. Spread mayonnaise mixture evenly over the bottom of each bun; top with patties, bell pepper and arugula. Cover with bun tops.

  • 1⅓ cups frozen corn, thawed
  • 2 tsp canola oil
  • 1 tsp lime juice
  • ½ tsp Sriracha hot sauce
  • ⅛ tsp salt
  • 1 cup cubed pineapple

Side Dish Instructions

  1. Sauté corn in hot oil in a skillet over medium-high heat. Add corn; sauté 4 to 5 minutes or until tender. Stir in lime juice, Sriracha, and salt.
  2. Serve corn and pineapple with burgers.
