Creamy Sweet Potato Soup

Ingredients

  • 2½ lb sweet potatoes, peeled and cut into 2-inch pieces
  • 6 cups low-sodium chicken broth (or use vegetable broth)
  • 1½ cups chopped onion
  • 6 cloves garlic, crushed
  • 2 tsp fresh thyme
  • 1 bay leaf
  • 2 (5.3-oz) cartons plain Greek yogurt
  • ¼ cup butter
  • 1 tsp salt
  • 1 tsp pepper
  • ½ cup chopped walnuts

Instructions

  1. Combine potatoes, broth, onion, garlic, thyme, and bay leaf in a 5- to 7-quart slow cooker. Cover and cook on LOW 8 hours or until potatoes are tender; discard bay leaf. Cool 10 minutes.
  2. Process potato mixture using an immersion blender or in batches in a blender with center of lid removed so heat can escape.
  3. Return potato mixture to cooker; stir in yogurt, butter, salt, and pepper. Sprinkle each serving with nuts and, if desired, extra thyme.

Side Dish Ingredients

  • 1 (8-oz) French baguette (preferably whole wheat), cut diagonally into ¼-inch-thick slices
  • 1 Tbsp olive oil
  • 1 (4-oz) log goat cheese, softened
  • 2 apples, sliced
  • 2 Tbsp balsamic glaze

Side Dish Instructions

  1. Preheat oven to 425°F. Brush bread slices with oil. Place on a rimmed baking sheet. Bake 3 to 5 minutes or until toasted.
  2. Spread cheese over toasts; top with apple slices and drizzle with balsamic glaze.
