Tex-Mex Gnocchi
Shredded Lettuce Salad
Ingredients
- 1 Tbsp butter
- 1 (16-oz) pkg gnocchi
- 1 lb ground beef
- 1 (10-oz) can diced tomatoes and green chiles
- 1 cup chicken broth
- 1 (1-oz) envelope taco seasoning mix
- 1 (8-oz) pkg shredded Cheddar cheese
Instructions
- Melt butter in a large nonstick skillet over medium-high heat. Add gnocchi, and cook 3 to 4 minutes or until toasted. Remove from skillet.
- Cook beef in same skillet over medium heat until browned and crumbly; drain and return to skillet.
- Stir in tomatoes, broth, taco seasoning, and gnocchi. Bring to a boil, reduce heat, cover, and simmer 10 minutes or until gnocchi is tender. Sprinkle with cheese; cover, and cook 2 minutes or until cheese is melted.
Side Dish Ingredients
- 1 (8-oz) pkg shredded lettuce
- 2 Roma tomatoes, chopped
- 1 (3.5-oz) pkg tricolored tortilla strips
- ¼ cup cilantro-lime vinaigrette
Side Dish Instructions
- Toss together all ingredients just before serving. Serve over Tex-Mex Gnocchi recipe, if desired.
