Rice and Spicy Roasted Carrots

Ingredients

  • 2 lb ground beef
  • 1 Tbsp Italian seasoning
  • 1 (16-oz) jar Alfredo sauce
  • 1 (10-oz) pkg spinach
  • 1 cup shaved Parmesan cheese

Instructions

  1. Combine beef and Italian seasoning; shape mixture into 6 patties. Cook patties in a large skillet over medium-high heat until no longer pink.
  2. Meanwhile, heat Alfredo sauce in a saucepan over medium heat; gradually add spinach, stirring constantly, until wilted.
  3. Serve spinach mixture over patties; top with cheese.

  • 1½ cups long-grain white rice
  • 1 (16-oz) pkg carrots, cut into 4-inch sticks
  • 2 Tbsp olive oil
  • ½ tsp salt
  • ½ tsp crushed red pepper

Side Dish Instructions

  1. Preheat oven to 400°F. Cook rice according to package directions.
  2. Toss together carrots, oil, salt, and red pepper on a large rimmed baking sheet. Bake 10 minutes or until carrots are browned and tender.
