Sausage and Grits Casserole

Ingredients

  • ½ cup quick-cooking grits
  • ½ lb lean turkey breakfast sausage
  • 1 small red bell pepper, chopped
  • 1 large egg, lightly beaten
  • ¼ tsp salt
  • ½ tsp pepper
  • ½ cup shredded smoked Gouda cheese (or use Cheddar cheese)
  • Chopped fresh chives (optional)

Instructions

  1. Preheat oven to 350°F. Cook grits according to package directions.
  2. Cook sausage and bell pepper in a large nonstick skillet over medium heat 4 minutes or until sausage is browned, stirring to crumble; drain on paper towels.
  3. Stir together cooked grits, egg, salt, and pepper in a large bowl.
  4. Stir in sausage mixture and cheese. Pour grits mixture into an 8-inch baking dish coated with cooking spray.
  5. Bake 25 to 30 minutes or until golden brown and bubbly around edges. Serve sprinkled with chives, if on hand.

Side Dish Ingredients

  • 1 Tbsp sugar
  • 2 Tbsp lemon juice
  • 1 navel orange, peeled and sectioned
  • 1 grapefruit, peeled and sectioned
  • 1 (4-oz) pkg pomegranate seeds (arils)

Side Dish Instructions

  1. Stir together sugar and lemon juice in a small bowl. Combine oranges, grapefruit, pomegranate, and pears in a serving bowl. Drizzle lemon juice mixture over fruit; toss.
