Sausage and Grits Casserole
Citrus-Pomegranate TossIngredients
- ½ cup quick-cooking grits
- ½ lb lean turkey breakfast sausage
- 1 small red bell pepper, chopped
- 1 large egg, lightly beaten
- ¼ tsp salt
- ½ tsp pepper
- ½ cup shredded smoked Gouda cheese (or use Cheddar cheese)
- Chopped fresh chives (optional)
Instructions
- Preheat oven to 350°F. Cook grits according to package directions.
- Cook sausage and bell pepper in a large nonstick skillet over medium heat 4 minutes or until sausage is browned, stirring to crumble; drain on paper towels.
- Stir together cooked grits, egg, salt, and pepper in a large bowl.
- Stir in sausage mixture and cheese. Pour grits mixture into an 8-inch baking dish coated with cooking spray.
- Bake 25 to 30 minutes or until golden brown and bubbly around edges. Serve sprinkled with chives, if on hand.
Side Dish Ingredients
- 1 Tbsp sugar
- 2 Tbsp lemon juice
- 1 navel orange, peeled and sectioned
- 1 grapefruit, peeled and sectioned
- 1 (4-oz) pkg pomegranate seeds (arils)
Side Dish Instructions
- Stir together sugar and lemon juice in a small bowl. Combine oranges, grapefruit, pomegranate, and pears in a serving bowl. Drizzle lemon juice mixture over fruit; toss.
