Cauliflower Hash

Mixed Berries with Lemon Honey

Ingredients

  • ½ lb lean turkey breakfast sausage
  • 1 small onion, chopped
  • 1 small head cauliflower, grated (see Note)
  • 1 large red bell pepper, cut into bite-size pieces
  • 4 cups chopped kale
  • ½ cup shredded reduced-fat sharp Cheddar cheese
  • 1 tsp Montreal steak seasoning
  • 4 large eggs

Instructions

  1. Cook sausage in a large cast-iron skillet over medium-high heat 6 to 8 minutes or until browned and crumbly; remove from skillet, reserving drippings in pan.
  2. Cook onion in hot drippings in skillet over medium-high heat 4 minutes or until tender; add cauliflower and bell pepper. Cook 8 to 10 minutes or until vegetables are crisp-tender.
  3. Stir in kale; cook 1 to 2 minutes or until wilted. Stir in sausage, cheese, and seasoning.
  4. Make 4 indentations in cauliflower mixture. Crack 1 egg into each indentation; cook, covered, 2 to 4 minutes or until egg whites are set and yolks are desired doneness.
  5. Serve hash with ketchup, if desired.

Side Dish Ingredients

  • 1 (4.4-oz) pkg blueberries
  • 1 (4.4-oz) pkg raspberries
  • 1 tsp honey
  • 1 tsp lemon juice

Side Dish Instructions

  1. Combine berries in a bowl.
  2. Stir together honey and lemon juice; drizzle over berries. Toss to coat.
