Asian-Inspired Nachos

Ingredients

  • 1 (12-oz) pkg wonton wrappers
  • 1½ lb ground pork (or use ground chicken or ground beef)
  • 2 cups frozen shelled edamame
  • 1 cup shredded carrots
  • 1 cup sesame sauce
  • 3 Tbsp low-sodium soy sauce
  • 2 Tbsp sesame seeds
  • 3 green onions, sliced

Instructions

  1. Preheat oven to 400°F. Cut wonton wrappers in half diagonally to make triangles.
  2. Arrange half of triangles in single layers on two large parchment-lined baking sheets. Bake, without turning, 6 minutes or until lightly browned and crisp. Remove to a wire rack. Bake remaining triangles.
  3. Meanwhile, cook pork in a large nonstick skillet coated with cooking spray over medium-high heat 5 minutes. Add edamame and carrots; cook 6 minutes or until tender. Add sesame sauce and soy sauce; cook 2 minutes or until thoroughly heated.
  4. Divide wontons among 6 plates. Top with pork mixture; sprinkle with sesame seeds and onions.
