Spicy Pork, Pepper and Tomato Stir-Fry
Sesame Bulgur
Ingredients
- ½ lb boneless center-cut pork loin chops, cut into thin strips
- 2 tsp canola oil, divided
- ½ cup sliced red onion
- 1 red bell pepper, cut into thin strips
- ½ green bell pepper, cut into thin strips
- ¾ cup grape tomatoes
- 3 Tbsp low-sodium teriyaki sauce
- ¼ tsp ground ginger
- ⅛ tsp crushed red pepper
Instructions
- Cook pork, in 2 batches, in 1½ tsp hot oil per batch in a large nonstick skillet over medium-high heat 3 to 5 minutes until browned; remove from skillet.
- Cook onion and bell peppers in 1 Tbsp hot oil in same skillet 3 to 4 minutes or until crisp-tender, stirring frequently. Add tomatoes, teriyaki sauce, ginger, and crushed red pepper to pan.
- Return pork to pan; cook 4 minutes or until tomatoes are tender.
Side Dish Ingredients
- ⅓ cup bulgur
- 1 Tbsp sesame oil
- ⅛ tsp salt
- 1 Tbsp finely chopped green onion
Side Dish Instructions
- Cook bulgur according to package directions; toss with remaining ingredients.
