Spicy Pork, Pepper and Tomato Stir-Fry

Ingredients

  • ½ lb boneless center-cut pork loin chops, cut into thin strips
  • 2 tsp canola oil, divided
  • ½ cup sliced red onion
  • 1 red bell pepper, cut into thin strips
  • ½ green bell pepper, cut into thin strips
  • ¾ cup grape tomatoes
  • 3 Tbsp low-sodium teriyaki sauce
  • ¼ tsp ground ginger
  • ⅛ tsp crushed red pepper

Instructions

  1. Cook pork, in 2 batches, in 1½ tsp hot oil per batch in a large nonstick skillet over medium-high heat 3 to 5 minutes until browned; remove from skillet.
  2. Cook onion and bell peppers in 1 Tbsp hot oil in same skillet 3 to 4 minutes or until crisp-tender, stirring frequently. Add tomatoes, teriyaki sauce, ginger, and crushed red pepper to pan.
  3. Return pork to pan; cook 4 minutes or until tomatoes are tender.

Side Dish Ingredients

  • ⅓ cup bulgur
  • 1 Tbsp sesame oil
  • ⅛ tsp salt
  • 1 Tbsp finely chopped green onion

Side Dish Instructions

  1. Cook bulgur according to package directions; toss with remaining ingredients.
