Cheesy Corn Chip Pie
Skillet Corn with Bell Pepper
Ingredients
- ½ small onion, chopped
- ½ green bell pepper, chopped
- 1½ tsp olive oil
- 1 Tbsp Mexican seasoning
- 1 (15-oz) can tomato sauce
- 1 (15-oz) can pinto beans, drained and rinsed
- ½ (9.25-oz) pkg corn chips (or use tortilla chips)
- 1 cup shredded Cheddar cheese
- ½ small head iceberg lettuce, shredded
- 1 Roma tomato, chopped
- ¼ cup sour cream
Instructions
- Preheat oven to 400°F. Cook onion and bell pepper in hot oil in a large skillet over medium heat 3 minutes.
- Stir in Mexican seasoning, tomato sauce, and beans; bring to a boil, reduce heat, and simmer 10 minutes.
- Spread bean mixture into a 9-inch square baking dish coated with cooking spray; top with chips, pressing down gently. Sprinkle with cheese.
- Bake 15 minutes or until hot and bubbly.
- Top with lettuce and tomato; serve with sour cream.

- 1½ cups frozen corn kernels
- 1 red bell pepper, sliced
- 1 Tbsp olive oil
- ¼ tsp salt
- ⅛ tsp pepper
Side Dish Instructions
- Cook corn and bell pepper in hot oil in a large skillet over medium-high heat 10 to 12 minutes or until tender, stirring often. Stir in salt and pepper.
