Chorizo Breakfast Bake

Ingredients

  • 8 oz ground chorizo sausage
  • 8 large eggs
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • ½ tsp pepper
  • ½ tsp dried oregano
  • 2 Tbsp chopped fresh chives

Instructions

  1. Preheat oven to 350°F.
  2. Cook chorizo in a large skillet over medium-high heat 8 to 10 minutes or until browned, stirring to crumble.
  3. Whisk together eggs in a large bowl. Stir in bell pepper, onion, pepper, oregano, and chorizo. Pour egg mixture into a 9-inch baking dish coated with cooking spray. Bake 25 to 30 minutes or until eggs are set.
  4. Sprinkle with chives; cool slightly before cutting.
