Chorizo Breakfast Bake
Fresh StrawberriesIngredients
- 8 oz ground chorizo sausage
- 8 large eggs
- 1 green bell pepper, chopped
- 1 onion, chopped
- ½ tsp pepper
- ½ tsp dried oregano
- 2 Tbsp chopped fresh chives
Instructions
- Preheat oven to 350°F.
- Cook chorizo in a large skillet over medium-high heat 8 to 10 minutes or until browned, stirring to crumble.
- Whisk together eggs in a large bowl. Stir in bell pepper, onion, pepper, oregano, and chorizo. Pour egg mixture into a 9-inch baking dish coated with cooking spray. Bake 25 to 30 minutes or until eggs are set.
- Sprinkle with chives; cool slightly before cutting.
