Lime Chicken with Peanut Sauce

Ingredients
- 2 (6-oz) boneless, skinless chicken breasts
- 2 tsp olive oil
- ½ tsp lime zest
- ½ tsp salt, divided
- 3 Tbsp natural creamy peanut butter
- 1 Tbsp low-sodium soy sauce
- 1½ tsp honey
- 1½ tsp fresh lime juice
- ½ tsp grated ginger
- 1 clove garlic, minced
- ⅛ tsp crushed red pepper
- 1 Tbsp water
Instructions
- Rub chicken with oil, lime zest, and ¼ tsp salt. Cook chicken on a hot grill pan or cast-iron skillet over medium heat 5 to 6 minutes per side or until chicken is done.
- Meanwhile, stir together peanut butter, soy sauce, honey, lime juice, ginger, garlic, red pepper, water, and ¼ tsp salt. Serve sauce with chicken.

- ½ cup brown jasmine rice
- ½ lb sugar snap peas
- 1½ tsp dark sesame oil
- ¼ tsp salt
- ¼ tsp pepper
- 1 Tbsp water
- 1 tsp sesame seeds
Side Dish Instructions
- Cook rice according to package directions.
- Meanwhile, sauté sugar snap peas in hot oil in a nonstick skillet over medium-high heat 2 minutes. Sprinkle with salt and pepper.
- Add water; cover and steam 2 minutes or until snap peas are crisp-tender. Uncover and stir in sesame seeds.
