Lime Chicken with Peanut Sauce

Ingredients

  • 2 (6-oz) boneless, skinless chicken breasts
  • 2 tsp olive oil
  • ½ tsp lime zest
  • ½ tsp salt, divided
  • 3 Tbsp natural creamy peanut butter
  • 1 Tbsp low-sodium soy sauce
  • 1½ tsp honey
  • 1½ tsp fresh lime juice
  • ½ tsp grated ginger
  • 1 clove garlic, minced
  • ⅛ tsp crushed red pepper
  • 1 Tbsp water

Instructions

  1. Rub chicken with oil, lime zest, and ¼ tsp salt. Cook chicken on a hot grill pan or cast-iron skillet over medium heat 5 to 6 minutes per side or until chicken is done.
  2. Meanwhile, stir together peanut butter, soy sauce, honey, lime juice, ginger, garlic, red pepper, water, and ¼ tsp salt. Serve sauce with chicken.

  • ½ cup brown jasmine rice
  • ½ lb sugar snap peas
  • 1½ tsp dark sesame oil
  • ¼ tsp salt
  • ¼ tsp pepper
  • 1 Tbsp water
  • 1 tsp sesame seeds

Side Dish Instructions

  1. Cook rice according to package directions.
  2. Meanwhile, sauté sugar snap peas in hot oil in a nonstick skillet over medium-high heat 2 minutes. Sprinkle with salt and pepper.
  3. Add water; cover and steam 2 minutes or until snap peas are crisp-tender. Uncover and stir in sesame seeds.
