Mustard-Crusted Turkey Breast

Ingredients

  • 1 (3-lb) bone-in turkey breast
  • 3 Tbsp whole-grain mustard
  • 1 tsp dried thyme
  • ½ tsp salt
  • ½ tsp pepper
  • 1 (14.5-oz) can low-sodium chicken broth

Instructions

  1. Preheat oven to 325°F. Place turkey on a rack in a roasting pan; loosen skin from turkey.
  2. Combine mustard, thyme, salt, and pepper; rub underneath and over skin. Pour broth into pan.
  3. Bake 1 hour and 30 minutes or until a meat thermometer inserted into thickest portion reads 165°F; shield with foil, if necessary.

Side Dish Ingredients

  • ½ lb organic sweet potato
  • 2 Tbsp pure maple syrup
  • 1 Tbsp butter
  • ½ tsp ground cinnamon
  • 2 Tbsp chopped pecans
  • ½ lb green beans, trimmed
  • ½ tsp salt
  • ½ tsp pepper

Side Dish Instructions

  1. Preheat oven to 325°F. Bake potato 45 minutes or until tender; peel and mash.
  2. Stir in syrup, butter, and cinnamon; spoon into an individual baking dish. Top with nuts. Bake 10 minutes or until toasted.
  3. Meanwhile, steam green beans in a steamer basket over simmering water 6 minutes or until crisp-tender. Sprinkle with salt and pepper.
