Spinach Naan Pizzas
Ingredients
- 2 (8.8-oz) pkg whole-grain naan
- 3 plant-based sausage links, casings removed
- 2 Tbsp minced garlic
- 1 Tbsp olive oil
- 1 (10-oz) pkg baby spinach
- 2 Tbsp lemon juice
- 1 (8-oz) ball fresh mozzarella cheese, sliced
- ½ cup freshly grated Parmesan cheese
- ¼ tsp freshly ground pepper
Instructions
- Preheat oven to 450°F. Bake naan on a foil-lined large baking sheet 6 to 8 minutes or until lightly browned.
- Meanwhile, cook sausage and garlic in hot oil in a large skillet over medium-high heat 6 to 8 minutes or browned and crumbly. Gradually add spinach; cook until wilted. Stir in lemon juice.
- Spoon sausage mixture over naan; top with cheeses.
- Bake 6 to 8 minutes or until lightly browned and cheese is melted; sprinkle with pepper. Cut into wedges.
