Spinach Naan Pizzas

Ingredients

  • 2 (8.8-oz) pkg whole-grain naan
  • 3 plant-based sausage links, casings removed
  • 2 Tbsp minced garlic
  • 1 Tbsp olive oil
  • 1 (10-oz) pkg baby spinach
  • 2 Tbsp lemon juice
  • 1 (8-oz) ball fresh mozzarella cheese, sliced
  • ½ cup freshly grated Parmesan cheese
  • ¼ tsp freshly ground pepper

Instructions

  1. Preheat oven to 450°F. Bake naan on a foil-lined large baking sheet 6 to 8 minutes or until lightly browned.
  2. Meanwhile, cook sausage and garlic in hot oil in a large skillet over medium-high heat 6 to 8 minutes or browned and crumbly. Gradually add spinach; cook until wilted. Stir in lemon juice.
  3. Spoon sausage mixture over naan; top with cheeses.
  4. Bake 6 to 8 minutes or until lightly browned and cheese is melted; sprinkle with pepper. Cut into wedges.
