Parmesan-Crusted Fish over Zucchini Pasta
Ingredients
- 12 frozen Parmesan-crusted fish fillets
- 3 large zucchini
- 1 (13.25-oz) pkg whole-grain linguine
- 1 cup grape tomatoes, quartered
- 2 Tbsp butter
- ½ cup freshly grated Parmesan cheese
- ¼ cup chopped fresh basil
- ½ tsp pepper
Instructions
- Bake fish according to package directions. Cut zucchini into noodles using a spiralizer. Or cut lengthwise into slices. Stack 3 slices at a time, and cut lengthwise into thin strips to resemble strands of pasta.
- Cook pasta according to package directions, adding zucchini during last minute of cooking; drain, and toss with tomatoes, butter, cheese, basil, and pepper.
- Serve fish over pasta; sprinkle with more cheese, if desired.
