Garlic Roast Beef with Horseradish Sauce

Ingredients

  • 1 tsp dried thyme
  • ¾ tsp pepper, divided
  • ¼ tsp salt
  • 1 (1½-lb) eye of round roast
  • 3 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • ½ cup sour cream
  • 1 Tbsp prepared horseradish

Instructions

  1. Sprinkle thyme, ½ tsp pepper, and salt over roast. Place in a 3- to 4-quart slow cooker. Sprinkle with garlic, and pour broth into cooker.
  2. Cover and cook on LOW 8 to 10 hours or until beef is tender. Slice beef.
  3. Stir together sour cream, horseradish, and ¼ tsp pepper. Serve with beef.

Side Dish Ingredients

  • ¾ lb baking potatoes, peeled and chopped
  • 6 Tbsp low-sodium chicken broth
  • 1 Tbsp butter
  • ¼ tsp salt
  • ¼ tsp pepper
  • ¾ lb asparagus, trimmed
  • 1 Tbsp water
  • ½ tsp Italian seasoning

Side Dish Instructions

  1. Bring potatoes and water to cover to a boil in a saucepan; reduce heat, and simmer 12 minutes or until tender.
  2. Drain potatoes; stir in broth and butter. Mash to desired consistency; sprinkle with salt and pepper.
  3. Place asparagus in a microwave-safe dish; add 1 Tbsp water. Cover and microwave on HIGH 3 minutes or until crisp-tender. Drain; sprinkle with seasoning.
