Garlic Roast Beef with Horseradish Sauce
Creamy Mashed Potatoes and Steamed AsparagusIngredients
- 1 tsp dried thyme
- ¾ tsp pepper, divided
- ¼ tsp salt
- 1 (1½-lb) eye of round roast
- 3 cloves garlic, minced
- 1 cup low-sodium beef broth
- ½ cup sour cream
- 1 Tbsp prepared horseradish
Instructions
- Sprinkle thyme, ½ tsp pepper, and salt over roast. Place in a 3- to 4-quart slow cooker. Sprinkle with garlic, and pour broth into cooker.
- Cover and cook on LOW 8 to 10 hours or until beef is tender. Slice beef.
- Stir together sour cream, horseradish, and ¼ tsp pepper. Serve with beef.
Side Dish Ingredients
- ¾ lb baking potatoes, peeled and chopped
- 6 Tbsp low-sodium chicken broth
- 1 Tbsp butter
- ¼ tsp salt
- ¼ tsp pepper
- ¾ lb asparagus, trimmed
- 1 Tbsp water
- ½ tsp Italian seasoning
Side Dish Instructions
- Bring potatoes and water to cover to a boil in a saucepan; reduce heat, and simmer 12 minutes or until tender.
- Drain potatoes; stir in broth and butter. Mash to desired consistency; sprinkle with salt and pepper.
- Place asparagus in a microwave-safe dish; add 1 Tbsp water. Cover and microwave on HIGH 3 minutes or until crisp-tender. Drain; sprinkle with seasoning.
