Blackberry-Glazed Pork Chops
Long Grain and Wild Rice and Steamed Green Beans
Ingredients
- 2 bone-in pork loin chops
- 2 Tbsp olive oil, divided
- 2 Tbsp sliced shallots
- 1 tsp minced garlic
- ¼ cup red wine
- 2 Tbsp balsamic vinegar
- ¼ cup seedless blackberry preserves
Instructions
- Season pork lightly with salt and pepper. Cook pork in 1 Tbsp hot oil in a skillet over medium-high heat 4 minutes per side or until done. Remove from skillet; keep warm.
- Cook shallots and garlic in 1 Tbsp hot oil in same skillet 30 seconds. Add wine and vinegar; cook 1 minute.
- Stir in preserves; cook 1 minute or until smooth, stirring constantly. Drizzle over pork.

- 1 (8.8-oz) pouch microwavable long-grain and wild rice
- 1 (8-oz) pkg thin green beans
Side Dish Instructions
- Heat rice according to package directions .
- Steam green beans according to package directions; season to taste with salt and pepper.
