Chicken-Apple Sausages with Cabbage

Ingredients
- 6 (3-oz) fully cooked chicken-apple sausages, sliced
- 1 Tbsp olive oil
- 6 cups coarsely chopped green cabbage
- 2 cups chopped red onion
- 2 green bell peppers, chopped
- 1½ cups water
Instructions
- Cook sausage in hot oil in a large nonstick skillet over medium heat 2 minutes or until sausages just begin to brown.
- Stir in cabbage, onion, and bell peppers; cook 8 minutes or until cabbage is crisp-tender, stirring occasionally.
- Stir in water; cook 2 minutes or until liquid is almost evaporated.
Side Dish Ingredients
- 1 (3-count) pkg romaine lettuce hearts
- ¼ cup olive oil
- 3 Tbsp lemon juice
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp pepper
- 1½ cups chopped tomatoes
Side Dish Instructions
- Cut each lettuce heart in half lengthwise.
- Whisk together oil, lemon juice, garlic, salt, and pepper.
- Top romaine halves with tomatoes; drizzle with dressing.
