Ingredients

  • 6 (3-oz) fully cooked chicken-apple sausages, sliced
  • 1 Tbsp olive oil
  • 6 cups coarsely chopped green cabbage
  • 2 cups chopped red onion
  • 2 green bell peppers, chopped
  • 1½ cups water

Instructions

  1. Cook sausage in hot oil in a large nonstick skillet over medium heat 2 minutes or until sausages just begin to brown.
  2. Stir in cabbage, onion, and bell peppers; cook 8 minutes or until cabbage is crisp-tender, stirring occasionally.
  3. Stir in water; cook 2 minutes or until liquid is almost evaporated.

Side Dish Ingredients

  • 1 (3-count) pkg romaine lettuce hearts
  • ¼ cup olive oil
  • 3 Tbsp lemon juice
  • 2 cloves garlic, minced
  • ½ tsp salt
  • ½ tsp pepper
  • 1½ cups chopped tomatoes

Side Dish Instructions

  1. Cut each lettuce heart in half lengthwise.
  2. Whisk together oil, lemon juice, garlic, salt, and pepper.
  3. Top romaine halves with tomatoes; drizzle with dressing.
