Cranberry-Maple Baked Chicken
Sautéed Spinach
Ingredients
- 1 cup cranberries, divided
- 2 Tbsp olive oil
- 2 Tbsp maple syrup
- 2 Tbsp balsamic vinegar
- ½ tsp salt
- 3 cloves garlic, halved
- 2¼ lb boneless, skinless chicken breasts
- 1½ tsp dried thyme
- 1½ tsp Italian seasoning
Instructions
- Preheat oven to 375°F. Process ¾ cup cranberries, oil, syrup, vinegar, salt, and garlic in a food processor until pureed, scraping sides as needed.
- Place chicken in a 13- x 9-inch baking dish; pour cranberry mixture over chicken. Top with ¼ cup cranberries, thyme, and Italian seasoning. Bake 20 minutes or until chicken is done.

- 1 onion, chopped
- 3 cloves garlic, minced
- 2 Tbsp olive oil
- 1 (10-oz) pkg baby spinach
- ¼ tsp salt
- ¼ tsp pepper
- 6 Tbsp chopped walnuts
Side Dish Instructions
- Cook onion and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until onion is lightly browned.
- Add spinach, salt, and pepper; cook 2 to 3 minutes or until spinach wilts. Top with nuts.
