Cranberry-Maple Baked Chicken

Ingredients

  • 1 cup cranberries, divided
  • 2 Tbsp olive oil
  • 2 Tbsp maple syrup
  • 2 Tbsp balsamic vinegar
  • ½ tsp salt
  • 3 cloves garlic, halved
  • 2¼ lb boneless, skinless chicken breasts
  • 1½ tsp dried thyme
  • 1½ tsp Italian seasoning

Instructions

  1. Preheat oven to 375°F. Process ¾ cup cranberries, oil, syrup, vinegar, salt, and garlic in a food processor until pureed, scraping sides as needed.
  2. Place chicken in a 13- x 9-inch baking dish; pour cranberry mixture over chicken. Top with ¼ cup cranberries, thyme, and Italian seasoning. Bake 20 minutes or until chicken is done.

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 Tbsp olive oil
  • 1 (10-oz) pkg baby spinach
  • ¼ tsp salt
  • ¼ tsp pepper
  • 6 Tbsp chopped walnuts

Side Dish Instructions

  1. Cook onion and garlic in hot oil in a large skillet over medium-high heat 3 to 4 minutes or until onion is lightly browned.
  2. Add spinach, salt, and pepper; cook 2 to 3 minutes or until spinach wilts. Top with nuts.
