Peanut Chicken-Zucchini Noodle Bowls

Ingredients

  • 3 (16-oz) pkg zucchini spirals
  • 2 (10.7-oz) pkg sweet potato spirals
  • ½ cup chopped fresh basil (or use cilantro)
  • ⅔ cup Thai peanut sauce, divided
  • 2 Tbsp dark sesame oil
  • 3 cups shredded rotisserie chicken
  • ⅓ cup roasted, salted peanuts
  • 1 lime, cut into wedges

Instructions

  1. Toss together zucchini, potatoes, basil, ⅓ cup peanut sauce, and oil in a large bowl.
  2. Divide zucchini mixture among 6 bowls. Top with chicken and peanuts; drizzle with ⅓ cup peanut sauce. Serve with lime wedges.

  • ⅓ cup sesame-ginger dressing
