Peanut Chicken-Zucchini Noodle Bowls
Super Greens with Sesame Dressing
Ingredients
- 3 (16-oz) pkg zucchini spirals
- 2 (10.7-oz) pkg sweet potato spirals
- ½ cup chopped fresh basil (or use cilantro)
- ⅔ cup Thai peanut sauce, divided
- 2 Tbsp dark sesame oil
- 3 cups shredded rotisserie chicken
- ⅓ cup roasted, salted peanuts
- 1 lime, cut into wedges
Instructions
- Toss together zucchini, potatoes, basil, ⅓ cup peanut sauce, and oil in a large bowl.
- Divide zucchini mixture among 6 bowls. Top with chicken and peanuts; drizzle with ⅓ cup peanut sauce. Serve with lime wedges.
